there is a restaurant called Gobo in Greenwich Village. The food selection is delicious (not to mention healthy), and the atmosphere is quite nice as well. Definitely recommended! (:

Ingredients (Serves 1):

  • 2 Eggs
  • 1/3 Cup Seasoned Bread Crumbs
  • 1/3 of 1 Yellow Squash
  • 1 Small Whole Wheat Tortilla
  • 1/4 Cup Chopped Onions
  • 1/4 Cup Chopped Red Bell Pepper
  • 1 oz. Reduced-Fat Sharp Cheddar Cheese

Baked Breaded Squash Recipe:

  1. Preheat oven to 400 degrees Fahrenheit
  2. Cut squash into slices 1/4 inch thick
  3. Crack eggs, separate the yolks in one bowl, and put the whites in another bowl to use for the omelette later
  4. Pour the bread crumbs on a plate
  5. Dip squash in egg yolks, then in the bread crumbs
  6. Place breaded squash in a lightly greased baking pan
  7. Cook in oven for 15 minutes
  8. Flip over the squash slices, and cook for another 7 minutes

Red Bell Pepper and Onion Egg White Omelette Quesadilla Recipe:

  1. Chop the onion and red bell pepper
  2. Mix into egg whites so the are coated with the egg
  3. Place mixture into a lightly greased non-stick baking pan on medium-low heat
  4. Flip omelette after 4-5 minutes, lower heat setting
  5. Add salt and pepper to taste
  6. Cover 1/2 of the omelette with cheese
  7. Flip the open half of the omelette over the half covered in cheese
  8. Cook until cheese melts
  9. Lift omelette with your spatula to place the tortilla underneath
  10. Cook on medium-low heat for 2 minutes
  11. Flip over the open half of the tortilla onto the half with egg, lower heat
  12. Flip quesadilla over, cook for a minute
  13. Put onto plate, cut it into three triangular slices
