
Ingredients (Serves 1):
- 2 Eggs
- 1/3 Cup Seasoned Bread Crumbs
- 1/3 of 1 Yellow Squash
- 1 Small Whole Wheat Tortilla
- 1/4 Cup Chopped Onions
- 1/4 Cup Chopped Red Bell Pepper
- 1 oz. Reduced-Fat Sharp Cheddar Cheese

Baked Breaded Squash Recipe:
- Preheat oven to 400 degrees Fahrenheit
- Cut squash into slices 1/4 inch thick
- Crack eggs, separate the yolks in one bowl, and put the whites in another bowl to use for the omelette later
- Pour the bread crumbs on a plate
- Dip squash in egg yolks, then in the bread crumbs
- Place breaded squash in a lightly greased baking pan
- Cook in oven for 15 minutes
- Flip over the squash slices, and cook for another 7 minutes


Red Bell Pepper and Onion Egg White Omelette Quesadilla Recipe:
- Chop the onion and red bell pepper
- Mix into egg whites so the are coated with the egg
- Place mixture into a lightly greased non-stick baking pan on medium-low heat
- Flip omelette after 4-5 minutes, lower heat setting
- Add salt and pepper to taste
- Cover 1/2 of the omelette with cheese
- Flip the open half of the omelette over the half covered in cheese
- Cook until cheese melts
- Lift omelette with your spatula to place the tortilla underneath
- Cook on medium-low heat for 2 minutes
- Flip over the open half of the tortilla onto the half with egg, lower heat
- Flip quesadilla over, cook for a minute
- Put onto plate, cut it into three triangular slices
